- 90 g butter, softened
- 4 tablespoons sugar
- 2 eggs
- 2 cups self raising flour, sifted
- 1/4 teaspoon salt
- 1 cup milk
Directions

1preheat oven to 200 Celsius place 1/2 round patty pan tins on a baking tray and heat till VERY HOT before making mix. alternatively if you are lucky enough to have gem irons, use them.

2using an electric mixer, cream butter and sugar until light and fluffy.

3add the eggs one at a time, beating well after each addition.

4fold in 1/2 the flour and salt then the milk then the rest of the flour.

5remove patty pan tins from oven , still on the tray to retain heat, and fill each patty pan.

6cook 12 - 15 minutes until golden on top.

7serve warm with butter or any filling you like.

8I serve some with butter and jam and some with lemon curd.
