- 1/3 cup sugar
- 1 egg lightly beaten
- 1 1/2 cups self rising flour
- 1 cup milk
- whipped cream
- jam
Directions

1Preheat the oven to 425°F. Place two 12-cup mini muffin pans in the oven.

2Beat butter and sugar in large bowl with an electric mixer until light and fluffy. Gradually add egg, beating until combined. Stir in sifted flour and milk in 2 batches. Lightly grease hot muffin pans. Drop 1 level tbsp batter into each.

3Bake for 10 mins, or until firm and lightly browned. Serve hot with jam and cream.
