German Liver Dumplings

Ingredients

  • 1 lb. lean hamburger
  • 1 lb. ground liver
  • 2 sub rolls (put under faucet, then squeeze water out)
  • 4 eggs
  • 2 onions, chopped
  • 2 heaping Tbsp. flour
  • 5 to 6 Tbsp. bread crumbs
  • 1 Tbsp. marjoram
  • salt and pepper
  • large pot beef broth

Directions

    Mix together hamburger, liver, rolls, 1 onion, eggs, flour, bread crumbs, marjoram, salt and pepper; mixture will be soft but will shape in broth.

    Form balls, big or small, and drop in hot broth.

    Simmer for 20 to 30 minutes.

    They will rise.

    Remove when done; saute the second onion in butter and pour over dumplings.

    Serve with sauerkraut or mashed potatoes.
