German Potato Salad

Ingredients

  • 1 beaten egg
  • 1/2 c. sugar
  • 1 tsp. flour
  • 1/2 c. water
  • 1/2 c. vinegar
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 1/2 lb. potatoes
  • 2 medium onions
  • 1/2 lb. bacon
  • 2 or 3 stalks celery

    Fry or microwave bacon.

    Dice celery and onions and fry in bacon fat, then drain.

    Boil potatoes.

    Cool, peel and slice in casserole.

    Combine in 2-quart saucepan in order given, stirring after each addition.

    Boil until thick and pour over potatoes. Add celery and onions.

    Break up bacon on top.

    Parsley is optional.
