- 5 lb large red potatoes; quartered
- 3/4 oz rosemary; minced
- 1 tbsp fresh thyme; minced
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 cup gin
- 1 vegetable oil; as needed
- 1 salt and pepper
Directions

1Soak potatoes in gin overnight.

2Drain.

3Let air dry briefly before drying potatoes.

4Toss with vegetable oil.

6Roast at 400 for approximately 45 minutes or until potatoes are caramelized and fork tender.
