- 8 boneless, skinned chicken breasts
- 4 Tbsp. orange marmalade
- 4 Tbsp. freshly squeezed lemon juice
- 3 Tbsp. olive oil
- 1 tsp. grated ginger
- 1/2 tsp. garlic powder (if desired)
- 1/2 tsp. dried mustard (if desired)
Directions

1Mix the marmalade, lemon juice, oil, ginger, garlic powder and dried mustard.

2Preheat the oven to 350°.

3Lightly coat the chicken with the ingredients which have been mixed together.

4Put chicken in a shallow baking dish (no cover) which has been sprayed with nonstick cooking spray. Bake until done, about 45 minutes. Serves 8 to 10 depending on size of chicken.
