  • 1 1/4 cups low-fat honey graham cracker crumbs (9 sheets)
  • 1/4 cup light butter, melted
  • 2 tablespoons minced crystallized ginger
  • 2 tablespoons granulated sugar
  • Cooking spray
  • 3 large eggs, lightly beaten
  • 3/4 cup granulated sugar
  • 2 teaspoons grated lime rind
  • 1/3 cup fresh lime juice
  • 3 tablespoons all-purpose flour
  • 2 teaspoons grated peeled fresh ginger
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 teaspoons powdered sugar

    Preheat oven to 350°.

    Combine first 4 ingredients in a mixing bowl; mix well. Press into an 8-inch square baking pan coated with cooking spray.

    Bake at 350° for 12 minutes; cool slightly on a wire rack.

    Whisk together eggs and next 7 ingredients until smooth. Pour egg mixture over prepared crust. Bake at 350° for 20 to 22 minutes or until set. Cool completely on wire rack. Sift powdered sugar evenly over top. Cut into bars.
