- 1/4 cup butter, chopped
- 1/2 cup all-purpose flour
- 1 tbsp rice flour
- 2 tbsp powdered sugar
- 2 tsp lime rind, finely grated
- 2 tbsp candied ginger, finely chopped
- 1 cup ground almonds
- 2 tsp ground ginger
- 1.25 oz roasted unsalted cashews, finely chopped
Directions

1Preheat oven to 325°F. Line 3 baking sheets with parchment paper.

2Process butter, flours and powdered sugar until mixture forms a ball. Knead gently on floured surface until smooth. Stir in lime rind, candied ginger, ground almonds, and ground ginger.

3Shape level tablespoons of mixture into mounds about 1 inch apart on baking sheets, and top each mound with a whole cashew. Bake about 25 mins, then allow to cool on baking sheets.
