  • 2 c. cooked carrots, cooked and mashed
  • 1/2 c. soft bread crumbs
  • 2 tsp. onion, grated
  • 1/8 tsp. pepper
  • 1/2 c. grated cheese
  • 2 eggs, slightly beaten
  • 1/2 tsp. salt

Directions

    Combine all ingredients. Shape into balls about 1 1/2-inches in diameter. Roll in eggs and crumbs and fry in deep hot fat (375° to 385°) until browned. Drain on absorbent paper.
