Ingredients
- 1 lb. boneless chicken breasts, cut in strips
- 2 garlic cloves, minced
- 2 Tbsp. oil
- 1 large red pepper, cut in strips
- 1 large green pepper, cut in strips
- 1 c. sliced mushrooms
- 3/4 c. water
- 1 Tbsp. cornstarch
- 3 Tbsp. soy sauce
- 1/2 tsp. ground ginger
- 1 chicken bouillon cube
- 1 pouch rice or 4 servings
- 1/2 c. cashews
- 1 Tbsp. sesame seed (optional)
Directions

1Saute chicken and garlic in oil until lightly browned, about 4 minutes.

2Stir in peppers and mushrooms.

3Cook and stir until crisp-tender, 2 to 3 minutes.

4Combine water, cornstarch and soy sauce in small bowl, stirring until smooth.

5Stir into chicken mixture.

6Add ginger and bouillon cube.

7Cook over medium heat until mixture thickens and comes to a boil.

8Cook 1 minute.

9Spoon over rice and sprinkle with nuts.

10Makes about 4 servings.
