Ingredients

  • 2 1/4 c. all-purpose flour
  • 1/2 c. sugar
  • 1 1/2 to 2 tsp. ground ginger
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. water
  • 1/2 c. butter flavored shortening or margarine
  • 1/2 c. molasses
  • 3 eggs
  • 1/2 c. chopped walnuts or almonds

Directions

    In a large mixer bowl, mix 1 cup of flour, sugar, ginger, baking powder, cinnamon, baking soda and salt.

    Add water, shortening or margarine and molasses.

    Beat with electric mixer on low speed until blended, then on high speed for 2 minutes.

    Add remaining flour and eggs; beat until blended.

    Stir in nuts. Pour into greased pan.

    Bake in a 350° oven for 20 minutes, or until toothpick inserted in center comes out clean.

    Cool for 10 minutes on wire rack.
