- 8 granny smith apples
- 12 cup whole wheat pastry flour (or all-purpose flour)
- 12 cup rolled oats
- 34 cup light brown sugar, firmly packed
- 12 teaspoon ground cinnamon
- 14 teaspoon salt
- 14 cup sliced almonds
- 2 tablespoons crystallized ginger, chopped
- 3 tablespoons unsalted butter, chilled and cut up
- 5 tablespoons light olive oil (or unsalted butter, chilled and cut up)
Directions

1Preheat oven to 375 degrees.

2Lightly grease an 8 x 8 inch glass baking dish.

3Prepare granny smith apples: peel, quarter, core, and cut lengthwise into 1/4 inch thick slices; then place in prepared baking dish.

4In a large mixing bowl, stir together whole wheat pastry (or all-purpose) flour, rolled oats, light brown sugar, ground cinnamon, salt, sliced almonds, and chopped crystallized ginger.

5Using 2 knives, or a pastry blender, cut in unsalted butter until well distributed; stir in light olive oil.

6Mixture should be crumbly.

7Evenly distribute topping mixture over apples.

8Bake crisp for 55 minutes; or until apples are cooked through, and topping is light brown.

9Transfer baked crisp to a wire rack to cool a bit before serving.

10Serve warm.
