Gingered Carrots

- 1 lb. raw carrots, peeled and cut into 1/4-inch slices
- 1/4 tsp. ginger
- 1 tsp. sugar
- 1/4 c. margarine, melted
- 2 Tbsp. finely chopped fresh parsley or 1 Tbsp. dried parsley
Directions

1Place carrots in a saucepan.

2Add just enough water to cover. Boil 10 to 12 minutes or until barely tender.

3Drain.

4Mix ginger with sugar; sprinkle over carrots.

5Add melted margarine and stir gently.

6Sprinkle with parsley just before serving.
