Gingered Quinoa Salad

- 2/3 cup quinoa
- 1/2 cup grapefruit juice
- 3 tablespoons wish-bone balsamic vinaigrette dressing
- 1/4 cup sliced green onions
- 1/2 teaspoon fresh ginger finely grated
- 1 tablespoon golden raisins optional
- 1 1/3 cups water
Directions

1Combine quinoa with remaining ingredients except raisins. Sprinkle with raisins.

2Bring water to a boil over high heat in 2-quart saucepan. Add quinoa and return to a boil. Reduce heat to medium and cook covered 12 minutes or until water is absorbed. Remove from heat, fluff and let stand covered 15 minutes.
