Ingredients

  • 2/3 cup quinoa
  • 1/2 cup grapefruit juice
  • 3 tablespoons wish-bone balsamic vinaigrette dressing
  • 1/4 cup sliced green onions
  • 1/2 teaspoon fresh ginger finely grated
  • 1 tablespoon golden raisins optional
  • 1 1/3 cups water

Directions

    Combine quinoa with remaining ingredients except raisins. Sprinkle with raisins.

    Bring water to a boil over high heat in 2-quart saucepan. Add quinoa and return to a boil. Reduce heat to medium and cook covered 12 minutes or until water is absorbed. Remove from heat, fluff and let stand covered 15 minutes.
