Directions

1Fry the onions and garlic till browned in some oil

2Add in the meat and allow to brown all over

3Add in the grated tomato and tomato puree and let it simmer for 4 mins

4Add in the pepper and a teaspoon of curry powder and allow to simmer with the pot lid down for 4 mins

5Toss in the carrots with a 1/4 cup of water and allow to simmer with the pot lid down for 5 mins

6Add the corn and beans to the large pot with enough water just to cover. Season with salt and bring to a boil over medium heat.

7Reduce heat to low and simmer until cooked through, 8 minutes.
