- 1 lb. carrots, sliced
- 1/4 c. raisins (golden or white)
- 1/4 c. butter
- 4 Tbsp. honey
- juice of 1/2 lemon
- 1/4 tsp. ground ginger
- 1/4 c. sliced almonds
Directions

1Preheat oven to 375°.

2Cook carrots in about 1/2-inch boiling water for about 6 minutes; drain.

3Place carrots into a 1-quart baking dish.

4Stir in raisins, butter, honey, lemon juice and ginger.

5Bake, uncovered, for 35 minutes.

6Spoon into serving bowl.

7Sprinkle with almonds.
