Glazed Fruit Compote

Ingredients

  • 1 (3 3/4 oz.) pkg. vanilla pudding (not instant)
  • 1 (No. 2 1/2) can pineapple chunks
  • 1 (14 oz.) can Mandarin oranges
  • 1 c. seedless grapes
  • 1 1/2 c. fresh strawberries
  • 3 to 4 bananas
  • 3 Tbsp. lemon juice

Directions

    Drain pineapple and save the juice (you will need 1 1/2 cups of juice).

    Drain the water from the oranges and discard.

    Mix pineapple juice, lemon juice and pudding mix and cook until shiny and thick.

    Cool.

    Drain off accumulated juice from fruits.

    Add strawberries and sliced bananas just before serving.

    Glaze the fruit with the cooled pudding mixture and place in a glass bowl; toss lightly.
