- 1 lb new potato
- 78 cup chicken stock
- 8 tablespoons extra virgin olive oil
- 4 tablespoons red wine vinegar
- 1 tablespoon chopped chives
Directions

1Wash and slice each potato in half.

2Put them in a saucepan with the chicken stock, the olive oil and 3 tablespoons of the vinegar.

3Bring to the boil and boil hard until the liquid has all but evaporated and the potatoes are glossy.

4Sprinkle over the remaining vinegar, season with salt and pepper and scatter over the chives.
