Glazed New Potatoes

  • 1 lb new potato
  • 78 cup chicken stock
  • 8 tablespoons extra virgin olive oil
  • 4 tablespoons red wine vinegar
  • 1 tablespoon chopped chives

Directions

    Wash and slice each potato in half.

    Put them in a saucepan with the chicken stock, the olive oil and 3 tablespoons of the vinegar.

    Bring to the boil and boil hard until the liquid has all but evaporated and the potatoes are glossy.

    Sprinkle over the remaining vinegar, season with salt and pepper and scatter over the chives.
