  • 1 1/2 lb. seedless raisins
  • 1 1/2 c. sugar
  • 1 Tbsp. broken cinnamon bark
  • 1 Tbsp. whole cloves
  • 2 doz. cardamon seeds (whole pods)
  • 1 gal. red Burgundy

Directions

    Cover raisins with 3 cups water.

    Add spices and cracked cardamon seeds and shells.

    Simmer covered for 2 hours.

    Remove from heat; add wine.

    Bring almost to a simmer (160°) for 2 hours. Leave overnight.

    Drain.

    Squeeze raisins to get all wine out. Put in bottles.
