  • 1 c. corn meal
  • 1/2 c. rice flour
  • 1/2 c. soy flour
  • 1 tsp. salt
  • 4 tsp. gluten free baking powder
  • 1/4 c. sugar
  • 1/4 c. salad oil
  • 1 egg
  • 1 c. milk or soy milk

Directions

    Mix ingredients together and bake in a greased muffin pan at 400° for 15 to 20 minutes until golden brown.
