- 6 to 12 Idaho potatoes (2 1/2 to 5 lb.)
- 4 c. flour
- 1 handful grated cheese
- 2 Tbsp. salt
- 2 eggs
Directions

1Wash potatoes; leave skin on.

2Boil in approximately 1/2 inch of water.

3Peel while hot, then mash potatoes; let cool.

4Then add 4 cups of flour, grated cheese, salt and eggs.

5Knead together until large dough ball is formed.

6Roll segments into long strips. Cut strips into gnocchi size (1/4 inch).

7Place pieces into floured pan.

8Leave in cool place until ready to cook. Cook in boiling water for 5 minutes (stir one time).

9Serve in sauce.
