  • 8 oz soft goat cheese
  • 1/4 cup finely chopped fresh chives
  • 1/4 cup slivered almonds, toasted and finely chopped
  • 16 sheets phyllo dough

Directions

    Preheat the oven to 400°F. Line a baking pan with parchment paper. Combine cheese, chives and almonds in a medium bowl.

    Spray a phyllo sheet with no stick cooking spray. Top with another phyllo sheet. Repeat to make 4 stacks. Cut each stack into 4 to make 16 rectangles. Place a level tablespoon of cheese mixture along short sides of each rectangle. Roll phyllo over filling once; fold in both sides then roll up to form logs. Place on prepared pan.

    Bake for 15 mins until lightly browned.
