Ingredients
- 8 rice paper sheets, 10 or 12 inches in diameter
- 1/2 pound cooked pork or chicken, cut into thin strips
- 12 medium shrimp, cooked, peeled, and split in half lengthwise
- One 4-ounce bundle dried rice vermicelli, soaked in hot water until softened (about 10 minutes) and drained
- 1/2 cup fresh mint leaves, roughly chopped
- 1/2 cup fresh cilantro leaves, roughly chopped
- 1/2 cup fresh basil leaves (preferably Thai), roughly chopped
- 2 scallions, trimmed, cut into 2-inch pieces, and sliced lengthwise
- 2 carrots, grated or shredded
- 4 red-leaf lettuce leaves, thinly sliced crosswise
- 1/2 cup chopped roasted peanuts
- Peanut Sauce (page 586), Nam Prik (page 586), or lime wedges
Directions

1Set up a workstation: lay out a damp kitchen or paper towel on the counter and a large bowl of hot water (110120F, which is about what it measures from most taps).

2Dip a sheet of the rice paper in the hot water, turning once, until soft, about 10 seconds.

3Lay it flat on the towel.

4On the bottom third of the rice paper, spread an eighth of each of the remaining ingredients, except the sauce, in a line.

5Fold in the bottom edge and both sides and then roll tightly into a cylinder.

6The rice paper will adhere to itself.

7Repeat this process with the remaining ingredients.

8Serve with either of the dipping sauces or the lime wedges.

9Omit the meat, shrimp, and vermicelli.

10Heat 2 tablespoons corn, grapeseed, canola, or other neutral oil in a large skillet over medium heat.

11Scramble 2 eggs, remove, and then brown one 3-ounce block of tofu on all sides.

12Cut the tofu into thin strips.

13Wrap the spring rolls as directed, using the egg, tofu, and remaining ingredients, substituting more Thai basil for the mint and cilantro.

14Serve warm with Hoisin Chili Sauce (page 584).

16Omit the pork, vermicelli, carrots, and peanuts.

17Use shrimp, lobster, or crabmeat and add one peeled and sliced mango.
