Ingredients
- 2 medium carrots
- 1 medium onion, chopped
- 1/4 c. margarine or butter
- 2 1/4 c. water
- 1 c. uncooked regular rice
- 1 Tbsp. instant chicken broth
- 1/2 tsp. curry powder
- 1/4 tsp. salt
- 1/4 tsp. thyme leaves
- 1/4 c. toasted slivered almonds (optional)
Directions

1Cut carrots in 1/4-inch strips and then 1-inch pieces.

2Cook and stir onion in margarine in 2-quart saucepan until tender. Add carrots, water, rice and rest of the ingredients.

3Heat to boiling, stirring once or twice.

4Reduce heat.

5Cover and simmer for 15 minutes. Remove from heat.

6Fluff rice and let steam for 5 to 10 minutes. Top with almonds.
