Ingredients
- 2 Tbsp. lard or bacon drippings
- 1 large onion, coarsely chopped
- 3 lb. lean ground beef
- 2 medium cloves garlic, finely chopped
- 1 (8 oz.) can tomato sauce
- 1 Tbsp. ground hot red chile peppers (cayenne or Serrano)
- 1 Tbsp. ground mild red chile peppers
- 1/4 c. chili powder
- 2 tsp. ground cumin
- 1 1/2 tsp. salt
Directions

1Melt lard or drippings in large pot over medium heat.

2Add onion; cook until translucent.

3Add meat and garlic; cook until meat is brown.

4Add tomato sauce, red chile peppers, chili powder, cumin and salt.

5Stir to coat meat.

6Add water to cover meat. Bring to boil, reduce heat, cover and simmer for 2 to 2 1/4 hours, stirring frequently.

7Add water as needed to prevent liquid from cooking away.

8Serves 8 to 10.
