Goose Blind Chili

Ingredients

  • 2 1/2 lb ground beef (I use chuck)
  • 1 large onion, diced
  • 1 green pepper, diced
  • 4 stalks celery, sliced
  • 1 tbsp oil
  • 2 tsp crushed garlic
  • 1 tbsp chili powder
  • 1 tsp pepper
  • 1 tsp crushed red pepper flakes
  • 1 tsp cumin
  • 1 tsp seasoned salt
  • 1 pinch of basil
  • 1 pinch of thyme
  • 1 (28 ounce) can tomato puree'
  • 1 (28 ounce) can diced tomatoes
  • 1 (28 ounce) can kidney beans
  • 1 (16 ounce) can tomato juice

Directions

    In a large pot, brown ground beef.

    Drain.

    In a separate pan, saute' vegetables in oil and seasonings.

    When vegetables are tender and onion is translucent, blend in with beef.

    Add canned items and allow to simmer at least 1 hour.

    *For hotter chili with a Southwestern twist, add a few tablespoons of diced jalapeno peppers during the simmering process.
