Ingredients
- 2 1/2 lb ground beef (I use chuck)
- 1 large onion, diced
- 1 green pepper, diced
- 4 stalks celery, sliced
- 1 tbsp oil
- 2 tsp crushed garlic
- 1 tbsp chili powder
- 1 tsp pepper
- 1 tsp crushed red pepper flakes
- 1 tsp cumin
- 1 tsp seasoned salt
- 1 pinch of basil
- 1 pinch of thyme
- 1 (28 ounce) can tomato puree'
- 1 (28 ounce) can diced tomatoes
- 1 (28 ounce) can kidney beans
- 1 (16 ounce) can tomato juice
Directions

1In a large pot, brown ground beef.

2Drain.

3In a separate pan, saute' vegetables in oil and seasonings.

4When vegetables are tender and onion is translucent, blend in with beef.

5Add canned items and allow to simmer at least 1 hour.

6*For hotter chili with a Southwestern twist, add a few tablespoons of diced jalapeno peppers during the simmering process.
