Gorgonzola Cups

  • 8 pieces Bacon, cooked and crumbled
  • 2 cups Roma Tomatoes, Diced (about 4)
  • 8 ounces, weight Gorgonzola Cheese
  • 1 package Phyllo Cups

Directions

    Preheat oven to 350.

    Cook bacon until crisp.

    Drain on a paper towel, then chop or crumble.

    Dice tomatoes.

    Mix bacon, tomatoes and Gorgonzola cheese together in a bowl.

    Spoon into Phyllo cups until just mounded.

    Place on a baking sheet.

    Cook for 20 minutes until slightly browned on top/edges.

    Serve hot/warm will be very hot to pop in your mouth so let it cool slightly.
