Ingredients
- 1 medium eggplant
- 1/2 tablespoon tamarind
- 1 large onions chopped
- 2 each tomatoes diced
- 6 each green chili peppers slit & cut into pieces
- 1 x curry leaves
- 1 teaspoon prepared mustard
- 1/2 teaspoon turmeric
- 1 x garlic optional
- 1 x salt to taste
- 3 tablespoons vegetable oil
Directions

1Chop the eggplant into very tiny pieces.

2Heat oil, add mustard seeds, when popping add curry leaves, chillies, onions and fry until onions become translucent.

3Add tomatoes and eggplant and fry for another five minutes.

4If using tamarind paste add a cup and half of water, or pour equal quantity of extract from fresh pulp.

5Throw in the turmeric, salt and garlic.

6Let it simmer for a while until eggplant becomes really soft and is barely able to retain its shape.

7Remove from heat.

8Tomato-Onion Gotsu:

9More tomatoes can be substituted instead of the eggplant for a tomato-onion gotsu.

10Add more chillies if necessary.
