  • 1 (4 to 5 lb.) chicken

    Heat oven to 450°.

    Unwrap chicken and remove giblets from cavity.

    Thoroughly rinse chicken inside and out.

    Place bird on roasting pan with shallow sides (no higher than 1-inch) and place in oven.

    Bake for 30 minutes.

    Reduce heat to 400° and bake 15 to 25 minutes more or until the thigh meat registers 160° on a meat thermometer or the juices of thigh run clear when poked with a fork.

    Remove from oven.

    Let stand 10 to 20 minutes before carving.

    Serve with baked potatoes and cooked green beans or salad.
