  • 8 medium, cooked potatoes, cooked in skins, peeled and grated
  • 2 c. grated sharp Cheddar cheese
  • 1/2 c. butter
  • 1 1/2 c. (16 oz.) sour cream
  • 1/2 c. chopped green onion
  • salt and pepper to taste
  • paprika

Directions

    Cook potatoes in skins and cool.

    Peel and grate.

    Melt butter; remove from heat and blend sour cream, onion, salt and pepper. Fold into potatoes and sprinkle with paprika.

    Bake, uncovered, at 350° for 30 minutes or until heated.
