  • 6 medium potatoes
  • 2 c. shredded Cheddar cheese
  • 1/4 c. butter, melted
  • 1 1/2 c. sour cream
  • 1/3 c. finely chopped green onions (optional)
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • 2 Tbsp. butter

Directions

    Cook potatoes in skins. Cool, peel and shred coarsely. Combine cheese, melted butter, sour cream and seasonings.

    Fold in potatoes.

    Pour into greased 2-quart casserole dish. Dot with 2 tablespoons butter and sprinkle with paprika. Bake, uncovered, for 30 minutes at 350°.
