- 1/2 lb. butter
- 2 c. sugar
- 1 c. coconut
- 5 large eggs
- 2 to 3 c. milk
- 1/2 tsp. vanilla
- 1 c. chopped pecans
- 2 tsp. baking powder
Directions

1Cream butter and sugar.

2Soften crackers in 2 cups milk and hold aside.

3Add eggs, one at a time, to creamed mix and beat well.

4Then add vanilla, coconut, pecans and baking powder and mix well.

5Pour in greased baking pan.

6Preheat oven at 350°.

7Bake for 1 hour, using tube or layer cake pans.

8Ice cake with mixture of 1 pound confectioners sugar, 1/2 pound butter and small drained can of crushed pineapple.
