  • 2/3 c. fine whole wheat flour
  • 1/3 c. unbleached white flour
  • 1/4 tsp. salt
  • 7/8 c. milk
  • 2 eggs
  • 2 Tbsp. butter or oil

Directions

    Mix flour and salt.

    Beat eggs light.

    Add milk and butter slowly.

    Add flour and mix well.

    Beat 1 minute with electric beater.

    Mix should be like heavy cream.

    Place in buttered muffin tins 1/3 full.

    Bake 20 minutes at 450°.

    Reduce oven to 350° and finish baking 15 more minutes.

    Remove from tins.

    Serves 8 to 12.
