- 6 to 8 large tart apples
- 2 pie crusts
- 1/2 c. sugar
- 1/2 c. firmly packed brown sugar
- 2 tsp. flour
- 1/2 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1/4 tsp. allspice
- 1 Tbsp. grated lemon peel
- 2 Tbsp. butter
Directions

1Core and pare apples.

2Cut in quarters, then slice thin.

3Line 9-inch pie pan with crust.

4Mix sugars, flour and spices.

5Rub a little sugar mixture on crust in pan.

6Arrange apples in pan, heaping slightly in center.

7Sprinkle evenly with remaining sugar mixture; scatter lemon peel over surface.

8Dot with butter.

9Adjust top crust; trim edges and flute.

10Cut slits in center to allow steam to escape.

11Bake at 425° for 40 to 45 minutes, until apples are tender and crust is golden brown.
