Ingredients

  • 1/4 c. sifted all-purpose flour
  • 1 1/4 c. white or yellow cornmeal
  • 2 Tbsp. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 egg
  • 1 c. plus 2 Tbsp. milk
  • 3 Tbsp. soft shortening or bacon drippings

    Start oven heating to 425°.

    Generously grease a 9 x 9 x 2-inch pan.

    Place in oven to heat while mixing batter.

    Stir together the flour, cornmeal, sugar, baking powder and salt.

    Beat egg; combine with milk.

    Add with shortening to dry ingredients all at one time; beat with rotary beater until smooth.

    Pour into heated pan.

    Bake in hot oven (425°) for 20 to 25 minutes, or just until set.

    Serve hot, cut into squares, with butter.
