- 1/4 c. sifted all-purpose flour
- 1 1/4 c. white or yellow cornmeal
- 2 Tbsp. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1 egg
- 1 c. plus 2 Tbsp. milk
- 3 Tbsp. soft shortening or bacon drippings
Directions

1Start oven heating to 425°.

2Generously grease a 9 x 9 x 2-inch pan.

3Place in oven to heat while mixing batter.

4Stir together the flour, cornmeal, sugar, baking powder and salt.

5Beat egg; combine with milk.

6Add with shortening to dry ingredients all at one time; beat with rotary beater until smooth.

7Pour into heated pan.

8Bake in hot oven (425°) for 20 to 25 minutes, or just until set.

9Serve hot, cut into squares, with butter.
