Ingredients

  • 340 grams diced dates
  • 2 tablespoons rum
  • 160 grams flour
  • 50 grams rolled oats
  • 2.5 teaspoons baking powder
  • 250 grams sugar
  • 3/4 teaspoon salt
  • 3 pieces eggs
  • 2 tablespoons butter, melted
  • 2 teaspoons vanilla
  • 2 tablespoons hot water
  • 1.5 cups toasted pecans
  • 1/2 cup coconut
  • 1/2 cup cacao nibs

Directions

    dice dates and soak in rum for at least 30 minutes

    combine flour, oats, baking powder, sugar and salt.

    combine butter, vanilla and hot water.

    add eggs and combined liquids to flour mixture.

    stir in pecans, cacao nibs, coconut and dates.

    spread in greased 9 x 13 pan.

    Bake for 35-45 minutes at 350 degrees.

    cool and cut into 16 rectangles.
