Ingredients

  • 1 frying chicken, cut up or 1 chicken breast, halved and 2 chicken legs and thighs
  • 2 Tbsp. salad oil
  • salt, pepper
  • 1 c. water
  • 2 c. Tokay grapes
  • 1 medium size green pepper
  • 1 medium size onion
  • 2 Tbsp. cornstarch
  • 1/4 c. honey
  • 1/4 c. vinegar
  • 1 tsp. salt
  • 1 (1-inch) piece fresh ginger root (optional)
  • 1 (8 oz.) pkg. frozen pea pods or 1 (10 oz.) pkg. frozen green peas

    Brown chicken pieces in oil in skillet; remove to baking dish. Sprinkle with salt and pepper.

    Add 1/2 cup water and cover.

    Bake in 350° oven for 1 hour.

    Halve and seed grapes.

    Cut green pepper into 1-inch squares and onion into coarse pieces to make 1 cup each.

    Add remaining 1/2 cup water, cornstarch, honey, vinegar and salt to chicken, stirring constantly.

    (This mixture will be quite thick but will thin down after vegetables are added.)

    Then add ginger, green pepper and onion.

    Simmer 3 minutes longer.

    Remove ginger root and pour sauce over chicken to serve.
