- 1 eggplant, large
- 1 onion, finely chopped
- 34 cup packaged breadcrumbs
- 2 tablespoons plain yogurt
- 3 cloves, garlic. crushed
- 12 cup parsley, finely chopped
- 1 tablespoon cider vinegar
- 1 12 tblps lemon juice
- 12 cup olive oil
Directions

1Place whole eggplant on oven tray.

2Bake in a hot oven for one hour or till soft.

3Remove from oven, cool slightly.

4Peel eggplant, chop flesh roughly.

5Combine flesh with remaining ingredients in food processor.

6Process till smooth.

7Refrigerate mixture overnight.
