Ingredients

  • 1/2 head lettuce
  • 1/2 bunch radishes, thinly sliced
  • 2 green onions, chopped
  • 12 calamata (Greek style) olives
  • 8 anchovy fillets
  • 1/3 c. olive oil
  • 1/2 tsp. dried oregano leaves
  • 1/2 unpared cucumber, thinly sliced
  • 2 tomatoes, cut into wedges
  • 1/2 lb. Feta cheese, cut into 1/2-inch wedges
  • 1/4 c. white wine vinegar
  • 1/2 tsp. salt

Directions

    Tear the lettuce into bite size pieces. Toss with cucumber, radishes and onions.

    Arrange lettuce, vegetables and tomatoes in salad bowl. Garnish with olives, cheese and anchovies; refrigerate.

    Shake remaining ingredients in tightly covered jar; refrigerate.

    Shake dressing and pour over salad. Toss to serve.
