Ingredients
- 3 Tbsp. olive oil
- 2 c. chopped onions
- 1 clove garlic, minced
- 1 Tbsp. tarragon
- 2 c. chopped fresh tomatoes or 16 oz. can plum tomatoes, drained and chopped
- 1/4 c. tomato paste
- 1 lb. shrimp, peeled and deveined
- pinch of crushed red pepper
- 1 c. Feta cheese, crumbled
- 2 c. cooked rice
Directions

1Preheat oven to 425°.

2In large skillet, heat olive oil; saute onions and garlic until onion is soft.

3Add parsley, tomatoes and tomato paste.

4Simmer, covered, for 20 minutes.

5Add shrimp and saute for 2 minutes.

6Do not overcook.

7Stir in red pepper.

8Place mixture in buttered 1 1/2-quart casserole.

9Sprinkle with cheese. Bake at 425° for 10 to 15 minutes or just until cheese melts and is bubbly.

10Serve over rice.
