  • 3 lb. fresh spinach
  • 2 bunches green scallions, finely chopped
  • 1/2 c. minced parsley
  • 1/2 tsp. dill
  • 1 lb. crumbled Feta cheese
  • 8 eggs, beaten
  • salt
  • 1/2 c. olive oil
  • 1/2 lb. filo pastry leaves
  • 1 c. melted butter

    Wash and trim spinach, dry completely and chop.

    Brown scallions in 1/2 cup olive oil until tender.

    Combine spinach, parsley, dill, beaten eggs and cheese.

    Add cooked scallions, season and mix well.
