Ingredients

  • 3 lb. stew meat
  • 1/2 c. butter
  • 2 1/2 lb. onions
  • 1 (6 oz.) can tomato paste
  • 1/3 c. red wine
  • salt and pepper to taste
  • 1 Tbsp. brown sugar
  • 2 Tbsp. red wine vinegar
  • 1 clove garlic
  • 1 bay leaf
  • 1 small cinnamon stick
  • 1/2 tsp. whole cloves

Directions

    Season meat with salt and pepper.

    Melt butter in Dutch oven; add meat and coat with melted butter but do not brown.

    Arrange sliced onions over meat.

    Mix together tomato paste, wine, brown sugar, wine vinegar, garlic and then pour over meat.

    Add bay leaf, cinnamon and cloves.

    Cover kettle; simmer 3 hours or until meat is very tender.

    Don't stir or turn!

    Serve with potatoes, rice or noodles.
