- 1 tablespoon of butter
- 1 large onion
- 2 1/4 cups beef broth
- 4 large red beets
- 1 medium can whole or stewed tomatoes
- salt and pepper to taste
- sour cream to serve
Directions

11. In a large pot melt butter and stir onion for a few minutes, until onion is slightly soft

22. Add the beef broth, beets and bring to a boil

33. reduce to a medium-low heat and add tomatoes and salt & pepper and cook for 25 to 30 minutes

44. Remove all the vegetables from the broth and put them in a blender, blend until smooth and return to broth

55. Stir the mixture to blend the vegetable puree and the broth together

66. serve with a dollop of sour cream
