Beet Soup

  • 1 tablespoon of butter
  • 1 large onion
  • 2 1/4 cups beef broth
  • 4 large red beets
  • 1 medium can whole or stewed tomatoes
  • salt and pepper to taste
  • sour cream to serve

Directions

    1. In a large pot melt butter and stir onion for a few minutes, until onion is slightly soft

    2. Add the beef broth, beets and bring to a boil
  3. 3
    3. reduce to a medium-low heat and add tomatoes and salt & pepper and cook for 25 to 30 minutes

    4. Remove all the vegetables from the broth and put them in a blender, blend until smooth and return to broth
  5. 5
    5. Stir the mixture to blend the vegetable puree and the broth together
  6. 6
    6. serve with a dollop of sour cream
