Ingredients
- 1 large yellow onion
- 2 Tbsp. butter
- 10 medium fresh mushrooms
- 1/4 tsp. dried tarragon
- 1/2 c. long grain rice
- 1 1/2 c. chicken broth
- 3/4 lb. fresh green beans
- salt to taste
- pepper to taste
Directions

1Chop onion.

2Melt butter in pan.

3Add onion; cook.

4Chop mushrooms.

5Add to onions and saute.

6Add tarragon and rice.

7Cook over low heat, stirring constantly for 3 minutes.

8Stir in chicken broth.

9Bring to a boil.

10Cover and simmer 20 minutes.

11Wash and trim green beans in 1-inch pieces.

12Cook in water with a little salt for 10 minutes.

13Drain.

14Gently fold green beans into rice. Add salt and pepper to taste.
