Green Beans with Lemon Dill Dressing

- 1 pound green beans trimmed
- 5 teaspoons dill weed freshly chopped
- 1 tablespoon shallots minced
- 1 tablespoon olive oil, extra-virgin
- 1 tablespoon lemon juice
- 1 1/4 teaspoon whole-grain mustard
- 1 x salt and black pepper to taste
Directions

1Bring an inch of water to a boil in a large saucepan fitted with a steamer basket.

2Place green beans, cover and steam until tender-crisp, about 6 minutes.

3Remove from the heat.

4Meanwhile, mix together dill, shallot, oil, lemon juice, mustard, salt and pepper in a large bowl and whisk until well blended.

5Stir in the green beans and toss to coat.

6Allow to stand at least 10 minutes to develop flavors.

7Serve room temperature or chilled.
