Green Chicken Curry

- 1 tbsp oil
- 1 None onion, sliced
- 1/4 cup green curry paste
- 1 cup chicken stock
- 1 can (14 oz) coconut milk
- 2 cups shredded rotisserie chicken
- 4 oz green beans, trimmed and halved
- 1 None zucchini, sliced
- 1/4 cup cilantro leaves
- None None Rice, to serve
Directions

1Heal oil in a large saucepan on high heat. Cook onion 2-3 mins, until tender. Stir in curry paste; cook 1 min, until fragrant.

2Stir in chicken stock and coconut milk. Bring to a boil on high heat. Reduce heat to low; simmer, covered, 10 mins.

3Stir in shredded chicken, green beans and zucchini. Simmer, uncovered, a further 2-3 mins, until beans are tender and chicken is heated through. Season to taste.

4Remove from heat. Stir in cilantro leaves and serve with rice.
