  • 3 boneless skinless chicken breasts
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 5 cups chicken broth
  • 1 medium onion, chopped
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 14 teaspoon cayenne pepper
  • 2 (16 ounce) cans chickpeas, drained
  • 1 (16 ounce) can cannellini beans
  • 1 (16 ounce) can whole kernel corn
  • 2 (4 ounce) cansof chopped green chilies
  • 2 cups sour cream
  • 1 cup heavy cream
  • 1 lime (optional)

Directions

    Saute onion and chicken in butter.

    Sprinkle flour over chicken and stir to combine well.

    Slowly add chicken broth, whisking well to combine.

    Add beans, corn and spices and stir to combine.

    Bring to a boil, reduce heat and simmer for 20 to 30 minutes.

    Add sour cream and heavy cream, stirring well to combine and serve.
