Ingredients

  • 6 to 8 tomatillos
  • 4 to 6 jalapenos (to taste)
  • 1 large onion, chopped
  • 1 clove garlic
  • 1/2 bunch fresh cilantro or more to taste
  • 1 tsp. cumin
  • salt and pepper to taste

Directions

    Husk tomatillos, seed jalapenos and cook together in boiling water until tomatillos change color and peppers become slightly tender; drain.

    Place in blender with remaining ingredients.

    Use over beef enchiladas.
