Green Pea and Cauliflower Curry

Ingredients
- 1 small cauliflower, cut into florets
- 1 12 cups green peas
- 4 tablespoons olive oil
- 1 medium white onion, thinly sliced
- 1 garlic clove, mashed
- 1 teaspoon grated ginger
- 34 teaspoon turmeric
- 1 tablespoon ground coriander
- 1 tablespoon vindaloo curry paste
- 2 teaspoons sugar
- 34 cup plain nondairy yogurt
- 2 tomatoes, cut into thin wedges
Directions

1In a pot over medium-high heat, add the cauliflower and green peas and cover with water.

2Bring to a boil and cook until tender.

3Drain.

4Heat the olive oil over medium heat in a saute pan.

5Cook the onion, garlic, and ginger until browned.

6Add the turmeric, coriander, vindaloo, sugar, nondairy yogurt, and tomatoes.

7Cook for a 1/2 hour.

8Add the cauliflower and peas.

9Cook for another 1/2 hour.

10Serve hot over rice.
