- 1 c. chopped parsley
- 2 Tbsp. shortening
- salt and pepper to taste

1Wash, peel and slice potatoes.

2Boil in salted water until almost tender; drain and dry over heat.

3Combine spinach and parsley and steam 7 to 10 minutes.

4Drain and add them to the potatoes.
